I started a small variety of herbs and my oregano has sprouted. I am looking forward to making my own fresh .. .Oregano pesto! I’ve made it with store bought oregano and I am anticipating that it will taste even better with fresh grown.Super excited for this because it is so versatile .I plan on freezing some of the pesto for future pizza…Yes!!! But for now the pesto… I am a fan of pesto,it is fresh and simple. Pesto is the icing of the cake. Here is my recipe for oregano pesto.
1 cup of fresh oregano( I do give it a good stuffing in the cup with my hands)
1 cup of parmesan cheese( I do get a good one, it does make a difference)
4 cloves of garlic(peeled)
1 cup raw almonds
1 cup olive oil(yep make sure it’s a good one)
salt and pepper
1 tablespoon of fresh lemon juice
Ok,so put everything but the oil in a blender or processor .Mix until chopped well,now add the oil slowly.It should be smooth looking.
You can store in the fridge for 5 days,or you can freeze in ice cubes trays or small food containers..once frozen pop into food storage bag.
You can add this to chicken,pork,pasta(especially with clams) and pizza.Enjoy!
