Tarts and Tea and books…Oh My..

My “go to” tart recipe is sooo easy and quick. The beauty about this tart is you can use any fruit(I usually do whats in season) and any add ins to the crust and filling,I will give some variations that I have tried.

You will need a 10 inch spring form pan,cream together

1/2 cup softened butter

1/3 cup sugar

1/4 teaspoons vanilla extract

1 cup of all purpose flour

Once creamed together press into bottom of pan…I do go a little up the sides

mix- 1- 8 oz softened cream cheese

1/4 cup sugar

1 egg

1/2 teaspoon vanilla

pour over crust

5 apples peeled and cut into slices

1/3 cup sugar&1 teaspoon of cinnamon

Toss all together and then arrange on top of filling-bake at 425 for 10 minutes and then lower heat to 375 and bake 30 minutes..I usually go by when the apples are tender and golden brown.Once it’s done I let it rest for 15 minutes and then unlock the pan.I cool for abot 2 hours and then keep it in fridge.

Crust ideas-chopped pecans, chopped pistachios,rosemary and fennel seeds

Filling ideas-grated lemon peel,grated orange peel and a swirl of raspberry preserves

Toppings-fruit,pie crumbs,oreo cookies,caramel and a drizzle of honey Enjoy!

After the tart has chilled I make a cup of tea, grab a good book,grab my little section of tart…lol.yea right.and curl up on my sofa and I am happy…
